ITS BEEN A WHILE!

Well ,I havent posted in a while, I have been so busy and really not much to talk about. As far as knitting, I am working on a few things. I am still in the process of making a cat bed for my babies. I am using chunky wool and I am going to felt it when I am done. I am very excited! I will post it before and after. http://kittnknit.blogspot.com has a few things I'd like you to look at. First she did the most gorgous felted bag! It's a must--see! She has also made a forum for crafters. I am very excited. MY FAT CHICKS

Well, I am on the right path to weight loss! I can feel it in my bones. I was looking at blogs one day and came across http://onefatchick.blogspot.com I tried to comment 2 or 3 different times but blogger was down. Then one day she posted in a weightloss group we were in that not many people were going to her blog...i had to tell her i had and I lOVED it! I asked her if I could link hers to mine so people could read her blog and enjoy it like I did. Well, I didnt see her post for a few days and went to check her blog to see what was up....Her and her friend Jenn started a new weightloss group! http://health.groups.yahoo.com/group/fatchicksonamission/
How lucky was I?? I joined the group right away! And not only was I lucky enough to meet LALA and Bubba ------I met Pissy too!! They are the greatest group of girls and the group just keeps growing and growing.Ty and so many other new ladies---I cant wait to meet and get to know all of you! We share recipes, websites, laughter and support. They are not only there for the good times and laughs---but for the bad times too....to let us know that its ok....We have a weigh in every Monday and different challenges. Creamy Baked Eggs

Low carb people who fear dairy or can't have it in their diet, this recipe is not for you. Everyone else, try it out!

1/4 cup half and half
8 large eggs
Salt and pepper
1 cup grated Jarisburg cheese or other semisoft cheese

Heat oven to 450F degrees. Pour cream into a 9-inch ovenproof skillet. Carefully crack the eggs into the skillet. Season with salt and pepper. Sprinkle evenly with cheese. Bake about 10 minutes, until eggs are set. If you prefer softer yolks, remove the eggs after 9 minutes; for firmer yolks, 11 minutes is sufficient.

Skillet Chicken Dijon (LOW CARB)

4 chicken breasts with or without skin
3 Tbs olive oil (or any other)
2 cloves garlic minced
3 Tbs white wine
2 Tbs soy sauce
2 Tbs Dijon mustard

Heat oil in a skillet. Add minced garlic and cook 3 minutes, stirring often. Add chicken breasts and brown. In a separate bowl, combine wine, soy sauce and mustard and mix well. Pour generously over chicken. Cover and cook until done. Or pour sauce in separate small bowls for dipping.
TORTILLA SOUP

1/2 c onions - chopped
4 ozs green chilies - chopped
4 c chicken broth
2 c long-grain white rice - cooked
10 ozs tomatoes and green chilies - undrained
5 ozs chicken breast strips - cooked and cubed
1 tbsp lime juice
low-fat tortilla chips

In a large saucepan, cook onions and chilies until tender. Add broth, rice, tomatoes, and chicken cubes. Mix well. Bring to a boil. Reduce heat. Cover and simmer for 20 minutes. Stir in lime juice. Top each serving with tortilla chips.

Rotini and Tuna Salad

Salad:
12 ozs tuna in water, drained and flaked
2 1/2 c rotini pasta, uncooked
1 c frozen green peas, thawed and cooked
1 c celery, sliced
1/2 c bell peppers, chopped
1/2 c onions, chopped

Dressing:
1 c fat-free mayonnaise
3 tbsps lemon juice, bottled
1/2 tsp thyme
1/8 tsp salt
1/8 tsp black pepper

Cook pasta according to directions on package. Rinse pasta with cold water and drain. For the salad combine pasta, tuna, peas, celery, bell peppers, and onions in a mixing bowl. Mix well. For the dressing combine mayonnaise, lemon juice, thyme, salt, and black pepper. Mix well. Gently stir dressing into the salad. Cover and refrigerate 1 hour.

8 servings; 197 Calories; 1g Fat; 16g Protein; 31g Carbohydrate; 13mg Cholesterol; 599mg Sodium

Tossed Red Potatoes & Portobello's (LOWFAT)


5 cups sliced red potato (about 2 1/4 pounds)
1/2 cup green onions, sliced
1/4 cup fresh parsley, chopped
3 tablespoons lemon juice
2 tablespoons capers
2 tablespoons extra-virgin olive oil
1 tablespoon balsamic vinegar
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon dried tarragon
1/4 teaspoon black pepper
8 garlic cloves, minced
2 portobello mushroom caps, thinly sliced

1. Bring potatoes to a boil in a large saucepan.
2. Reduce heat and simmer until tender.
3. Drain and cool.
4. In a large bowl combine green onions, garlic, lemon juice, capers, olive oil, vinegar, parsley, basil, oregano, tarragon and black pepper. Mix.
5. Add potatoes and portobello's. Toss well.

8 servings (serving size: 1 cup)

ipod cozy

Beginner.


2 skiens of yarn you like (i used 2 colors)
9" single-point bamboo needles, size 10-3/4
Hair elastic with plastic bobbles


Steps

1. Carrying both yarns together as one, CO 9 sts and work in St st until the work measures 8 1/4" Bind off.

2. Fold in half and sew the long edges together, creating a sleeve with an opening at the top.

3. Gently push one end of the bobble hair elastic between the second and third rows. Put each bobble through one at a time, one set to the front of the cozy and one set to the back.

You're done! The ipod slides through on either side of the elastic but stays securely inside

I swear! I have the best online friends ever! My buddy on my weightloss group, Melissa, who showed pictures of her wearing earrings she bought from me, Kitt, previously from knitting chicks,http://kittnknit.blogspot.com gave me props for earrings she bought from me and last but not least, KnitNana, http://knitnana.blogspot.com She posted pictures of what she bought and made my day with her kind words. MY NEW FRIEND ROMY

I am very happy, but surprised to write about a woman who has posted many nice things about me, my blog and my jewelry site. Her name is Romy and she lives in NC. Dont ask me how I came about her site, but i read 2 of her blogs and commented on 2 entries, until I realized the next entry I read was about my blog! I about peed! Her blog address is:

My husband made me a yarn holder. He took copy paper boxes and put the lids on bottom and glued them together. It works great! However he has to make me more because i have way more yarn than I thought!! Posted by Hello

My half finished dishcloth. First I have ever made! Its kinda big so I might use it to set hot things on, on the table! My cats claw got stuck on the bottom and shredded and pulled it loose a little!!!!  Posted by Hello
