Tangy Green Bean and Olive Salad
..makes a colorful winter-time salad.
1 (14.5 ounces) can green beans, drained
1/2 large red onions, 1/4 inch slices and separated into rings
1 cup sliced stuffed green olives, with brine
lettuce leaves
1. Place green beans and onion slices in a deep dish.
2. Pour olives and olive brine over all.
3. Cover, refrigerate, an marinate at least 3 hours, overnight is better, tossing occasionally.
4. Serve on lettuce leaves.
